My husband asked me if I wanted to go get pizza for dinner tonight? I totally wanted to; it has been a long day, I’m tired, I need to go grocery shopping (there’s not a fresh veggie or fruit to be found in the house), there’s tons to do tonight, and I have to get up early tomorrow morning. Sound familiar to any of you? But, like the good girl I’m trying to be (at least, I’m trying to be good more often), I said we should stay home and have chicken and stir fry. Here it is:
In case you think my halo is getting too shiny, I’ll share my secret ingredients for tonight’s dinner:
- Chicken
- Trader Joe’s Japanese Style Fried Rice
I made the chicken last night after putting the kids to bed. Preheat the oven to 300 degrees. Throw the chicken in a glass pan. Cover with foil. Cook for about 1 hour. Voila! It was in the fridge and all I had to do was heat it up tonight.
The fried rice was a bit more involved. I had to cut a corner off of the package before heating that up. While it was heating, I had time to take a picture of the package:
I know, I know…it’s out of the package. My daughter had taste tested this at Trader Joe’s during a grocery shopping outing. She loved it! After looking at the ingredient list, I decided I did, too. Here it is:
I knew everything on the list! That’s a lie, I had to look up a few things. Plus, “wheat” doesn’t really tell me too much. I Googled the things about which I had questions:
- Koji – It’s a fungus. Who knew?
- Calcium chloride – “As a firming agent, calcium chloride is used…in firming soybean curds into tofu.” Okay.
If I get a night off from cooking, we get to eat something super delicious, and it comes in this package, I’ve decided I’m okay with that. I tell ya what…it’s way better for me and my family than the pizza I could have had!
