My mom suggested this for dinner and I loved it! While she ate hers with a fork, I used Spicy Flax Seed and Soy chips from Trader Joe’s as my utensil. Deelish!!!
Ingredients
Refried beans
Green chilis (optional)
Shredded cheddar cheese
Lettuce (I added some spinach into my Romaine lettuce)
Onion
Tomatoes
Avocado
Corn chips
Preparation
Spread refried beans, green chilis, and cheese on a dinner plate. Microwave for 1 minute.
Top with lettuce, tomatoes, onion, and avocado.
DIG IN!!
