One of the first meals I made en masse was my chili. You can make it ahead of time. You can make huge batches and freeze half of it. You can make it in a crock pot and serve it immediately to large crowds (think open houses and potlucks). The best part? You can tweak your chili with the ingredients YOU like; it’s so easily customized!
Ingredients
3 lbs ground turkey or ground beef
5 – 15 oz cans of tomato sauce
3 – 15 cans of chili beans
2 -15 cans of black beans
2 cans of corn OR 1 pkg frozen corn (I prefer defrosted frozen corn since it tastes fresher)
Every spice and herb you can think of. I’m not kidding – look how many I use!!
Chili powder (I use quite a bit, probably 1/4 cup)
A tsp of each of the following:
Parsley
Sea salt
Pepper
Garlic salt
Garlic powder
Celery salt
Minced onion
Onion salt
Onion powder
White pepper
Italian seasoning
Oregano
Preparation
Dump it all it a crock pot.
Let it simmer in order to let the flavors combine.
You can add or increase the spices according to your taste.
Serve with chopped red onion, sour cream, and / or cilantro. Dip into it with corn chips or make your own Parmesan bread like we did.
To make the bread, simply take whole grain bread, butter it, and sprinkle with Parmesan cheese. Broil it.
You already have your protein, veggies, and carbs. Add a fruit and you’re all set to serve dinner!
