If you told me I could never eat mashed potatoes again, I’d be OK with that. Actually, that’s a lie. I loved mashed potatoes. Having said that, these mock garlic mashed potatoes made with cauliflower are a pretty great substitution. If you want to fool your kids into eating cauliflower – try these!
My cousin made these for my husband and me when we were over for dinner one night. I’m not sure where she got the recipe; I’d site the source if I knew what it was. If you’re cooking for more than two adults and two kids, I’d double this recipe.
Ingredients
- 1 head cauliflower
- 1 tbsp cream cheese
- 1/4 c parmesan cheese
- 1/2 tsp garlic
- 2 tsp chicken broth
- 1/8 tsp black pepper
- 1/2 tsp chives, chopped
- 3 tbsp unsalted butter
Preparation
- Rinse cauliflower and cut into small pieces. Cook in boiling water until tender. Drain well and pat dry. Do not let them cool.
- While the cauliflower is boiling, puree the cream cheese, parmesan cheese, garlic, broth, and pepper in a food processor.
- Add the cauliflower to the mix in the food processor. Whip everything together.
- Serve with the chives as garnish and butter on the side. I’ve been known to add sour cream or a bit more cream cheese. 🙂
