I had one of the best. salads. ever. when I was out at a restaurant for my birthday dinner last month. The tastes were so simple even I was able to recreate it! It only has five ingredients!
- Grilled chicken
- Salad greens – I prefer a mix of spinach, ice berg, and Romaine
- Mozzarella cheese, fresh
- Balsamic vinegar
- Pour some balsamic vinegar into a sauce pan. Reduce the vinegar over medium-low heat. If you set the heat too high, your vinegar will get gooey and sticky. The goal is to reduce it to a sauce which can be easily drizzled. So…keep an eye on it and stir it often.
- Assemble your plate – lettuce topped with chicken. Layer the tomatoes and mozzarella slices. Drizzle the balsamic vinegar reduction over everything.
- Eat up!
As you can see in my picture, we added avocado and sprinkled some parmesan cheese over it. These were awesome additions!
