Chicken Fajitas

These fajitas come together quickly if you’re short on time. I like to put toppings out on a cutting board (less dishes) for my fam to choose from.

Ingredients

  • 1lb Boneless skinless chicken breasts
  • 1/2 Yellow Bell Pepper sliced
  • 1/2 Green Bell Pepper sliced
  • Chopped red onion
  • 2 tbsp Olive Oil
  • 1/4 c Water
  • Chopped tomato
  • Avocado
  • Cilantro
  • Cheddar/jack cheese – shredded
  • 2% Greek yogurt
  • Corn or flour tortillas (warmed)

Taco Seasoning

  • 2 tbsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1 tsp paprika
  • 1 tbsp ground cumin
  • 2 tsp sea salt

Preparation

  • Mix together taco seasoning
  • Slice chicken breasts into strips
  • Add 1 tbsp olive oil to skillet on medium heat
  • Add taco seasoning, water and stir to combine
  • Add chicken to pan and brown until cooked through
  • Remove chicken from pan onto a plate and tent loosely with foil
  • Rinse pan to remove seasoning and add 1tbsp of oil
  • When oil is hot add onion and peppers
  • Cook onion and peppers until edges are brown – approx 4 minutes, then add chicken back to the pan
  • Serve with warm corn or flour tortillas and tomatoes, cheese, cilantro and greek yogurt
