These fajitas come together quickly if you’re short on time. I like to put toppings out on a cutting board (less dishes) for my fam to choose from.
Total cooking time: 25 minutes
- 1lb Boneless skinless chicken breasts
- 1/2 Yellow Bell Pepper sliced
- 1/2 Green Bell Pepper sliced
- Chopped red onion
- 2 tbsp Olive Oil
- 1/4 c Water
- Chopped tomato
- Avocado
- Cilantro
- Cheddar/jack cheese – shredded
- 2% Greek yogurt
- Corn or flour tortillas (warmed)
Taco Seasoning
- 2 tbsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- 1 tsp paprika
- 1 tbsp ground cumin
- 2 tsp sea salt
Preparation
- Mix together taco seasoning
- Slice chicken breasts into strips
- Add 1 tbsp olive oil to skillet on medium heat
- Add taco seasoning, water and stir to combine
- Add chicken to pan and brown until cooked through
- Remove chicken from pan onto a plate and tent loosely with foil
- Rinse pan to remove seasoning and add 1tbsp of oil
- When oil is hot add onion and peppers
- Cook onion and peppers until edges are brown – approx 4 minutes, then add chicken back to the pan
- Serve with warm corn or flour tortillas and tomatoes, cheese, cilantro and greek yogurt
